Thank heavens for the slow cooker!
I have often joked about what a REALLY bad cook I am. My family has a saying...when the fire department shows up....Mom's done cooking!
![]() Actually, I'm not that bad...I just don't like doing it very much. However, I am pretty good at making soups...I really love a good soup, especially in the winter months. Here are a couple of recipes from Better Homes and Gardens that I have tried that went over pretty well with my family...thought I would share them here! In my opinion...Campbell's has nothing on a good homemade soup. Loaded Bratwurst Stew * 4 cups coarsely chopped green cabbage (about 1/2 of a head) * 1 pound smoked bratwurst, cut into 1/2-inch-thick slices * 1-1/2 cups coarsely chopped round red potatoes * 3/4 cup chopped red sweet pepper (1 medium) * 1 medium onion, cut into thin wedges * 2 14-ounce cans chicken broth * 1 tablespoon spicy brown mustard * 1 tablespoon cider vinegar * 1/4 teaspoon salt * 1/4 teaspoon ground black pepper * 1/8 teaspoon celery seed * Shredded Swiss cheese (optional) Directions 1. In a 5- to 6-quart slow cooker, combine cabbage, bratwurst, potatoes, sweet pepper, and onion. In a large bowl, whisk together broth, mustard, vinegar, salt, black pepper, and celery seed. Pour over all in cooker. 2. Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3-1/2 hours. If desired, top each serving with cheese. Makes 6 servings. German Potato Soup * 1 pound cooked smoked sausage, halved lengthwise and cut into 1/2-inch slices * 1/2 of a 28-ounce package frozen loose-pack diced hash brown potatoes with onion and peppers (about 4 cups) * 1 16-ounce jar sauerkraut, rinsed and drained * 2 tablespoons stone ground mustard * 3 14-ounce cans chicken broth (5-1/4 cups) Directions 1. In a 4- to 5-1/2-quart slow cooker place sausage, frozen potatoes, sauerkraut, and mustard. Pour broth over all. 2. Cover and cook on low-heat setting for 7 to 9 hours or on high-heat setting for 3-1/2 to 4-1/2 hours. Makes 6 to 8 main-dish servings (about 9-2/3 cups). Hope you enjoy these! |

RE: Thank heavens for the slow cooker!
Oh I love ham and beans in the slow cooker. I usually use Northern White beans.
This sounds terrible, but after seeing that awful scene in the "Exorcist"....I just can't look at split-pea soup! It's probably really good too! I'll probably share a couple more later on today! |
